How to Carry Out SODIUM MONOGLUTAMATE TEST on SEASONINGS

 SODIUM MONOGLUTAMATE TEST 

AIM: To determine the amount of glutamate in seasoning 

APPARATUS: 250ml conical flask, measuring cylinder, 50ml Beaker. 

REAGENT: 0.1M NaOH, Bromothymol blue 

PRINCIPLE: This is a neutralization reaction between the acid (glutamate) and base (NaOH) 

PROCEDURE: 

Weigh 0.5g of the sample ( in granulated/powder) in a 250ml conical flask

Add 250ml of distilled water using measuring cylinder and heat to boil, then allow to cool

Add 2 drops of Bromothymol blue and titrate against 0.1M NaOH In the burette to a deep blue colour end point is obtained 

Calculation 

% Glutamate = Titre value * 14.7 * 100% 

                         Weight taken
