ASCORBIC ACID (VITAMIN C) TEST

AIM:
To determine the amount of ascorbic acid in fruit juice.

APPARATUS:
Burette, pipette, 100ml conical flask, beaker.

REAGENT:
0.01M Iodine solution, starch solution.

PRINCIPLE:
Ascorbic acid reduces iodine to iodide. The endpoint is indicated by the formation of a blue-black complex with starch when iodine is no longer being reduced.

PROCEDURE:

  • Pipette 10ml of filtered fruit juice into a 100ml conical flask.

  • Add 1ml of starch solution.

  • Titrate with 0.01M iodine solution until a permanent blue-black color appears.

CALCULATION:
% Ascorbic Acid = (Titre value × 0.88 × 100%)
              Volume of sample used
